  • 1215 fresh jalapenos (medium, about 34 inches long)
  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1215 slices thin-cut bacon
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional: ranch dip or sour cream for serving

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with foil or parchment paper and place a wire rack on top.
  2. Par-cook the bacon: Lay bacon slices on the wire rack and bake for 5-7 minutes until fat renders but bacon is still flexible. Remove and let cool slightly. Pat dry with paper towels.
  3. Prepare the jalapenos: Wash and dry jalapenos. Cut each in half lengthwise. Use a small spoon to scrape out seeds and white membranes (remove all for milder poppers, leave some for more heat).
  4. Make the filling: In a medium bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, salt, and black pepper. Beat with a hand mixer on medium speed for 2-3 minutes until light and fluffy.
  5. Stuff the jalapenos: Fill each jalapeno half with about 1-2 teaspoons of the cream cheese mixture. Smooth the top so it’s level with the cut edge.
  6. Wrap with bacon: Cut each par-cooked bacon slice in half crosswise. Wrap one half around the middle of each stuffed jalapeno half, slightly overlapping the ends on the bottom. Place seam-side down on the wire rack.
  7. Bake for 20-25 minutes until bacon is crispy and filling is bubbly. At 15 minutes, rotate the pan if needed. For extra crispy bacon, broil for the last 2 minutes, watching closely.
  8. Let cool on the wire rack for 5 minutes before serving. Serve warm with ranch dip or sour cream on the side.

Don’t skip par-cooking the bacon—it ensures crispy bacon without overcooking the peppers. Dry jalapenos thoroughly after washing to prevent soggy bacon. Use room temperature cream cheese for a smooth, fluffy filling. For make-ahead, stuff and wrap peppers up to a day in advance; add 5 minutes to baking time. For freezing, assemble unbaked poppers, freeze on a baking sheet, then transfer to a freezer bag for up to 2 months; bake from frozen at 400°F for 25-30 minutes.
