  • 2 cups cooked shredded chicken
  • 1 cup buffalo hot sauce
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream
  • Tortilla chips, for serving
  • Celery sticks, for serving
  • Carrot sticks, for serving
  • Pretzel bites, for serving

Instructions

  1. Prep your chicken first (5 minutes). If using rotisserie chicken, remove the skin and shred the meat with two forks. If cooking from scratch, poach 2 boneless skinless chicken breasts in simmering water for 15 minutes, then shred.
  2. Soften the cream cheese (10 minutes). Take the cream cheese out of the fridge 30 minutes before you start, or microwave it in 15-second bursts until soft but not melted.
  3. Heat your skillet over medium heat (1 minute). Add the buffalo sauce and let it warm up for about 30 seconds.
  4. Add the cream cheese in chunks (3-4 minutes). Drop in tablespoon-sized pieces and whisk constantly until fully incorporated and smooth.
  5. Stir in the sour cream and ranch dressing (2 minutes). Reduce heat to low and stir until well combined and glossy.
  6. Fold in the shredded chicken (2 minutes). Stir until every piece is coated and let cook for 1-2 minutes to warm through.
  7. Add half the cheddar cheese (2 minutes). Sprinkle in 1/2 cup of shredded cheddar and stir until melted.
  8. Taste and adjust (30 seconds). Add more buffalo sauce for heat or sour cream for creaminess as desired.
  9. Transfer to serving dish (1 minute). Pour into serving dish and top with remaining 1/2 cup cheddar. Optionally, broil for 2-3 minutes until bubbly.
  10. Garnish and serve (1 minute). Sprinkle with chopped green onions or fresh parsley. Serve immediately with chips, celery, and pretzels.

Notes

For best results, use block-style cream cheese (not whipped) and shred your own cheddar cheese. Keep heat on low after adding cream cheese to prevent separation. The dip thickens as it cools; add a splash of milk if needed. Leftovers can be stored in the fridge for up to 4 days or frozen for up to 2 months.
