A perfectly portioned turkey breast with a sweet-tart cranberry orange glaze that’s surprisingly simple to make but looks and tastes like you spent hours on it. Ideal for small gatherings, Friendsgiving, or a special dinner for two.

  • 1 boneless, skin-on turkey breast (about 2 to 2.5 pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon garlic powder
  • 1 cup fresh or frozen cranberries
  • ½ cup orange juice (fresh-squeezed preferred)
  • ¼ cup honey
  • 2 tablespoons brown sugar (light or dark)
  • 1 tablespoon orange zest
  • ½ teaspoon cinnamon
  • ¼ teaspoon fresh grated ginger
  • Pinch of salt
  • Fresh rosemary sprigs (for garnish, optional)
  • Extra orange slices (for garnish, optional)
  • Fresh cranberries (for garnish, optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven. Take the turkey breast out of the fridge and let it sit at room temperature for about 20 minutes.
  2. Pat the turkey breast completely dry with paper towels.
  3. In a small bowl, mix together 1 teaspoon salt, ½ teaspoon black pepper, and ½ teaspoon garlic powder. Rub this mixture all over the turkey breast, including under the skin if possible.
  4. In a small saucepan, combine 1 cup cranberries, ½ cup orange juice, ¼ cup honey, 2 tablespoons brown sugar, 1 tablespoon orange zest, ½ teaspoon cinnamon, ¼ teaspoon fresh grated ginger, and a pinch of salt. Bring to a simmer over medium heat, stirring occasionally. Cook for 8-10 minutes until cranberries have burst and mixture has thickened slightly. Remove from heat and let cool for about 5 minutes.
  5. Optional: Heat 2 tablespoons olive oil in an oven-safe skillet over medium-high heat. Sear the turkey breast skin-side down for 3-4 minutes until golden brown.
  6. Place the turkey breast in your baking dish or skillet, skin-side up. Generously coat the top and sides with about half the glaze using a pastry brush or spoon.
  7. Roast for 25 minutes, then remove from oven and apply another layer of glaze. Return to oven and continue roasting for a total of 45-55 minutes, until internal temperature reaches 160°F (71°C) in the thickest part.
  8. If the skin browns too quickly, tent loosely with aluminum foil.
  9. Remove from oven and transfer to a cutting board. Let rest for 10-15 minutes.
  10. While the turkey rests, reheat the remaining glaze in the saucepan over low heat. Add a tablespoon of orange juice or water if too thick.
  11. Slice the turkey breast against the grain into ½-inch thick pieces. Arrange on a platter, drizzle with warm glaze, and garnish with fresh rosemary sprigs and orange slices if desired.

Notes

Let the turkey rest for 10-15 minutes before slicing to allow juices to redistribute. The internal temperature will rise about 5 degrees during resting, so pull it at 160°F to reach safe 165°F. For best results, use fresh or frozen cranberries, not dried. The glaze can be made up to 3 days ahead and stored in the refrigerator.
