Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center of the oven. Grease your muffin tin or place silicone liners in each cup.
  2. Prepare the spinach: Heat a large skillet over medium heat. Add a drizzle of olive oil, then toss in the chopped spinach. Cook for 2-3 minutes, stirring occasionally, until wilted. Remove from heat and let cool slightly.
