These homemade salted caramel apple dumplings feature tender apples wrapped in flaky pastry, baked in a rich salted caramel sauce. A simple yet impressive dessert that comes together in about 45 minutes.

  • 1 package refrigerated pie crusts
  • 4 tablespoons unsalted butter, cold and cut into small cubes
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 large egg, beaten with 1 tablespoon water
  • 1 tablespoon coarse sugar (turbinado or demerara)
  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon flaky sea salt, plus more for finishing

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease an 8-inch or 9-inch square baking dish.
  2. Peel apples, cut in half through the stem, and scoop out the core and seeds from each half to create a cavity.
  3. In a small bowl, mix together 1/4 cup granulated sugar and 1 teaspoon cinnamon.
  4. Unroll pie crusts on a lightly floured surface. Cut each crust into four equal squares (8 squares total).
  5. Place one apple half, cut side up, in the center of a pastry square. Sprinkle about 1 teaspoon cinnamon sugar into the cavity and dot with a few cubes of cold butter. Bring the four corners of the pastry up to meet at the top, pinching seams to seal. Repeat with remaining apple halves and pastry squares.
  6. Arrange dumplings in the prepared baking dish, seam side up, leaving a little space between each.
  7. Brush tops with egg wash and sprinkle with coarse sugar.
  8. In a small saucepan, melt 1/2 cup butter over medium heat. Add brown sugar and whisk until combined. Let bubble gently for 2 minutes, whisking constantly. Slowly pour in heavy cream while whisking; continue whisking for 2-3 minutes until smooth and slightly thickened. Remove from heat and stir in vanilla and 1/2 teaspoon flaky sea salt. Reserve 1/4 cup of sauce for serving.
  9. Pour remaining warm caramel sauce over and around the dumplings.
  10. Place dish on a baking sheet. Bake for 30-35 minutes until pastry is golden brown and caramel is bubbling. If tops brown too quickly, tent with foil for the last 10 minutes.
  11. Let cool in the dish for 5-10 minutes. Serve warm, drizzled with reserved caramel sauce and an extra pinch of flaky sea salt.

Granny Smith apples are recommended for their tartness and ability to hold shape. Refrigerated pie crusts save time; let them sit at room temperature for 15 minutes before rolling.
