  • ¾ cup (150 grams) granulated sugar
  • ½ cup (120 ml) fresh orange juice
  • 2 tablespoons orange zest
  • 1½ tablespoons (about 15 grams) fresh ginger, finely grated
  • ¼ cup (60 ml) water
  • Pinch of salt (about ⅛ teaspoon)

Instructions

  1. Prep your ingredients first: zest and juice oranges, peel and grate ginger, measure sugar and water. Rinse cranberries and pick out any soft or shriveled ones.
  2. In a medium saucepan, combine water, orange juice, and grated ginger. Bring to a gentle simmer over medium-high heat and let bubble for about 2 minutes, stirring occasionally.
  3. Stir in granulated sugar and orange zest until sugar is completely dissolved, about 30 seconds.
  4. Add cranberries and stir. Increase heat to medium-high until mixture comes to a full boil, then reduce heat to medium-low for a steady simmer. Cook for 10-12 minutes, stirring occasionally, until most cranberries have burst and sauce coats the back of a spoon.
  5. Stir in the pinch of salt. Taste and adjust sweetness or ginger if needed.
  6. Remove from heat and let cool in the pot for 15 minutes, stirring occasionally to prevent a skin from forming. Transfer to a storage container and cool completely at room temperature (about 15-20 minutes) before refrigerating.

Notes

The sauce can be made up to 2 weeks in advance and stored in the refrigerator. It freezes well for up to 3 months. For a spiced version, add a cinnamon stick and 3 whole cloves during the ginger infusion step. For a bourbon-infused version, stir in 2 tablespoons of bourbon after removing from heat.
