  • 3 large eggs, room temperature
  • 3/4 cup granulated sugar

  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

  • 1 box (15.25 oz) yellow cake mix
  • 1 cup chopped pecans
  • 1/2 cup packed light brown sugar
  • 3/4 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large mixing bowl, combine pumpkin puree, evaporated milk, eggs, granulated sugar, vanilla extract, cinnamon, ginger, nutmeg, cloves, and salt. Whisk until smooth and well combined.
  3. Pour the pumpkin mixture into the prepared baking dish and spread evenly. Tap the dish gently on the counter to release air bubbles.
  4. In a small bowl, combine the dry cake mix, chopped pecans, and brown sugar. Stir with a fork until the pecans are evenly distributed.
  5. Sprinkle the crumble mixture evenly over the pumpkin layer. Do not press it down.
  6. Drizzle the melted butter evenly over the entire surface of the crumble, covering as much dry mix as possible.
  7. Bake for 45-50 minutes, until the top is deep golden brown and the edges are bubbly. The center should be set but still have a slight jiggle.
  8. Let the cake cool for at least 15-20 minutes before serving. The pumpkin layer will firm up as it cools.

Notes

For best results, use a plain yellow cake mix (not butter recipe or pudding variety). Toasting the pecans for 3-5 minutes before adding enhances flavor. Place a baking sheet on the rack below to catch any butter drips. The cake tastes even better the next day as flavors meld.
