  • 2 tablespoons olive oil (about 30 ml)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven.
  2. Pat the chicken thighs dry with paper towels. Season both sides generously with salt and black pepper.
  3. Heat 2 tablespoons of olive oil in your oven-safe skillet over medium-high heat until shimmering.
