Moist red velvet cupcakes with a surprise jam center and cream cheese frosting, designed to look like a vampire bite. Perfect for Halloween parties, these come together in under an hour with simple ingredients.

  • 1 ½ cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 tablespoon unsweetened cocoa powder
  • 1 ½ cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs, room temperature
  • 2 tablespoons red food coloring (gel preferred)
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • ½ cup seedless raspberry jam or red currant jelly
  • Red food coloring gel (optional, to deepen jam color)
  • Black decorating gel (optional, for spiderweb designs)

Instructions

  1. Preheat oven to 350°F (175°C). Line two 12-cup muffin tins with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, and cocoa powder.
  3. In a separate bowl, beat together oil, buttermilk, eggs, food coloring, vinegar, and vanilla extract until well combined.
  4. Pour wet ingredients into dry ingredients and mix on low speed until just combined. Do not overmix.
  5. Fill each liner about two-thirds full with batter.
  6. Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Cool in pan for 5 minutes, then transfer to a cooling rack to cool completely.
  7. While cupcakes cool, beat cream cheese and butter together until smooth. Gradually add powdered sugar, then vanilla and salt. Beat on medium-high for 2 minutes until light and fluffy. Chill frosting for 15-20 minutes if too soft.
  8. Once cupcakes are completely cool, use a small knife or apple corer to cut a cone-shaped hole about 1 inch deep in the center of each cupcake.
  9. Fill each hole with red jam or jelly using a piping bag or teaspoon. The jam should be level with the top of the cupcake.
  10. Pipe cream cheese frosting over the filled cupcakes, covering the jam completely. Drip a small amount of red jam down the side of the frosting to resemble blood. Optionally, add spiderweb designs with black decorating gel.

Notes

For best results, use gel food coloring for a vibrant red color. Room temperature ingredients are essential for proper emulsification. Do not overmix the batter to avoid tough cupcakes. Chill the frosting before piping for better shape. The jam filling can be deepened with a few drops of red gel coloring. Cupcakes can be made a day ahead; flavors develop overnight.
