Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×5-inch loaf pan or line it with parchment paper.
  2. Grate the zucchini using a fine grater. Gently squeeze out excess moisture with a clean kitchen towel or paper towel.
  3. In a large bowl, mash the bananas until smooth but still a bit chunky.
  4. Add the sugars, eggs, oil, and vanilla to the mashed bananas. Beat together until smooth and well combined.
  5. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  6. Fold the dry ingredients into the wet mixture gently, just until combined. Then fold in the grated zucchini evenly.
  7. Prepare the walnut streusel by combining chopped walnuts, brown sugar, melted butter, and cinnamon in a small bowl. Stir until the mixture resembles wet sand.
  8. Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Sprinkle the streusel evenly over the batter, pressing lightly so it sticks.
  9. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean or with just a few moist crumbs. Tent with foil halfway through baking if the streusel browns too fast.
  10. Cool the bread in the pan for about 15 minutes, then transfer to a wire rack to cool completely.
