Instructions

  1. Brown the butter: Place 1/2 cup unsalted butter in a medium saucepan over medium heat. Stir constantly as it melts, then watch for it to foam and turn golden brown with a nutty aroma, about 5-7 minutes. Remove from heat and let cool slightly.
  2. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  3. In a large mixing bowl, whisk together the browned butter and 1 cup granulated sugar until combined. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. In a separate bowl, sift together flour, baking soda, salt, and cinnamon.
  5. Grate zucchini and squeeze out excess moisture using paper towels or a clean kitchen towel.
