A quick and easy chicken noodle soup made with rotisserie chicken, rich broth, and tender egg noodles. Perfect for cold weather or when you need a comforting meal in under 30 minutes.

  • 1 large yellow onion, diced (about 1 ½ cups)
  • 3 medium carrots, peeled and sliced into rounds (about 1 ½ cups)
  • 3 celery stalks, sliced (about 1 cup)
  • 4 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 2 cups water
  • 1 rotisserie chicken, meat removed and bones reserved
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 3 cups shredded rotisserie chicken (about half the meat from a standard bird)
  • 6 ounces wide egg noodles (about 3 cups dry)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prep your ingredients: Shred the rotisserie chicken, reserving the bones and skin. Dice the onion, slice the carrots and celery, and mince the garlic.
  2. Sauté the vegetables: In a large Dutch oven over medium heat, melt the butter. Add the onion, carrots, and celery. Cook for 6-8 minutes until softened. Add the garlic and cook for 1 minute more.
  3. Build the broth: Pour in the chicken broth and water. Add the reserved chicken bones and skin, bay leaves, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Remove the bones and add noodles: Use tongs to remove and discard the bones and skin. Add the egg noodles and cook according to package directions (about 6-8 minutes), stirring occasionally.
  5. Add the chicken and finish: Stir in the shredded chicken and heat through for 2 minutes. Taste and adjust seasoning. If soup is too thick, add a splash of water or broth.
  6. Serve: Ladle into bowls and garnish with fresh parsley. Serve hot with crusty bread or saltines.

Notes

For meal prep, cook noodles separately and add to individual servings to prevent mushiness. Simmering the bones for 15 minutes enriches the broth. Season in layers for best flavor. For a thicker soup, mash some cooked vegetables against the pot before adding noodles.
