  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/4 cup pumpkin puree (100% pure pumpkin)
  • 4 cinnamon sticks
  • 1 tablespoon fresh ginger, sliced into thin coins
  • 1 teaspoon whole cloves
  • 8 green cardamom pods, lightly crushed
  • 1/2 teaspoon whole black peppercorns
  • 1 star anise (optional)
  • 1 vanilla bean, split lengthwise, or 1 teaspoon vanilla extract (optional)
  • Pinch of nutmeg, freshly grated (optional)
  • Pinch of salt (optional)

Instructions

  1. Prepare your spices: Slice fresh ginger into thin coins (about the thickness of a quarter). Lightly crush cardamom pods with the flat side of a knife to release seeds.
  2. Combine base ingredients: In a medium saucepan, add water, granulated sugar, and brown sugar. Whisk over medium heat until sugars have mostly dissolved (about 2 minutes). Do not let it boil yet.
  3. Add pumpkin and spices: Whisk in pumpkin puree until completely incorporated. Add all whole spices (cinnamon sticks, ginger slices, cloves, cardamom pods, black peppercorns, and star anise if using). Add vanilla bean now if using.
  4. Bring to a simmer: Increase heat to medium-high and bring mixture to a gentle simmer (small bubbles breaking surface, not a rolling boil). Reduce heat to low. This takes about 3-4 minutes.
  5. Simmer and steep: Let syrup simmer gently for 15 minutes, stirring occasionally to prevent sticking. Set a timer.
  6. Check consistency: After 15 minutes, syrup should have thickened slightly and darkened in color. It should coat the back of a spoon. If too thin, simmer 5 more minutes. If too thick, add a tablespoon of water.
  7. Remove from heat and cool slightly: Take saucepan off burner and let sit for 5 minutes. If using vanilla extract instead of bean, stir it in now.
  8. Strain the syrup: Place fine-mesh strainer over a heat-safe bowl or storage jar. Carefully pour syrup through strainer, pressing gently on solids with a spoon to extract all liquid. Discard solids.
  9. Cool completely: Let strained syrup cool to room temperature before sealing jar (about 30 minutes). Do not rush this step to avoid condensation.
  10. Store and enjoy: Once cooled, seal jar and refrigerate. Syrup will thicken more as it chills. Shake well before each use as pumpkin can settle.

Notes

Don’t skip the straining step to avoid biting into whole spices. For stronger flavor, let spices steep for an additional 30 minutes after simmering. The syrup keeps for up to 3 weeks in the refrigerator and can be frozen for up to 3 months. It also gets better after a day or two as flavors meld.
