This one-pan wonder features juicy chicken thighs and creamy Arborio rice baked together with garlic, Parmesan, and herbs. It’s a comforting, easy dinner that comes together in about 45 minutes with minimal cleanup.

  • 1.5 lbs (680g) bone-in, skin-on chicken thighs
  • 2 tablespoons (30ml) olive oil
  • 2 tablespoons (28g) unsalted butter
  • 6 cloves garlic, minced
  • 1 cup (200g) Arborio rice
  • 2 cups (480ml) low-sodium chicken broth
  • 1/2 cup (120ml) whole milk
  • 1 cup (100g) freshly grated Parmesan cheese, plus more for serving
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Pat chicken thighs dry with paper towels and season generously with salt and pepper.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Place chicken skin-side down in a single layer and cook undisturbed for 5-7 minutes until golden brown. Flip and cook for another 3 minutes. Transfer chicken to a plate.
  3. Reduce heat to medium. Add butter to the skillet. Once melted, add minced garlic and stir for about 30 seconds until fragrant.
  4. Add Arborio rice and stir for about 1 minute to coat each grain in the garlic butter.
  5. Pour in chicken broth and milk. Add dried thyme, dried oregano, and a pinch of salt and pepper. Stir, scraping up any browned bits from the bottom of the pan.
  6. Nestle chicken thighs back into the rice, skin-side up. Bring liquid to a gentle simmer on the stovetop (about 2-3 minutes).
  7. Transfer skillet to the preheated oven and bake uncovered for 25 minutes. Remove from oven, sprinkle Parmesan cheese evenly over rice and chicken, and return to oven for another 10-15 minutes until rice is tender and chicken reaches 165°F (74°C).
  8. Remove from oven and let rest for 5 minutes. Garnish with fresh parsley and extra Parmesan if desired.

Notes

For best results, use freshly grated Parmesan and bone-in, skin-on chicken thighs. Let the dish rest for 5 minutes after baking to allow the rice to absorb remaining liquid. If using boneless chicken, reduce sear time and check doneness earlier.
