A simple, one-pan fall dinner featuring sticky-sweet honey garlic chicken thighs and tender roasted root vegetables. Minimal cleanup, maximum flavor, and perfect for busy weeknights.

  • 4 cloves garlic, minced
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme

  • ¼ teaspoon salt
  • 4 bone-in, skin-on chicken thighs (about pounds total)
  • ¼ teaspoon smoked paprika (optional)
  • 3 medium carrots, peeled and cut into 2-inch chunks
  • 2 medium parsnips, peeled and cut into 2-inch chunks
  • 1 medium sweet potato, peeled and cut into -inch cubes
  • 1 medium red onion, cut into wedges
  • 3 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon dried rosemary (optional)
  • Fresh parsley or thyme, chopped (for garnish)
  • Flaky sea salt (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the middle of the oven. Line your baking sheet with parchment paper or foil.
  2. Prepare the vegetables: Wash and peel carrots, parsnips, and sweet potato. Cut into roughly 2-inch chunks. Cut red onion into wedges, leaving root end intact. In a large bowl, toss vegetables with 3 tablespoons olive oil, ½ teaspoon salt, ¼ teaspoon pepper, and dried rosemary if using. Spread on one side of the baking sheet, leaving room for chicken.
  3. Make the honey garlic glaze: In a small bowl, whisk together honey, minced garlic, soy sauce, 2 tablespoons olive oil, Dijon mustard, dried thyme, ½ teaspoon pepper, and ¼ teaspoon salt.
  4. Prepare the chicken: Pat chicken thighs dry with paper towels. Sprinkle with smoked paprika if using. Place on baking sheet next to vegetables, skin side up. Pour about two-thirds of the glaze over the chicken, coating evenly. Reserve remaining glaze.
  5. Roast for 25 minutes.
  6. Flip and baste: Remove baking sheet from oven. Flip chicken thighs over and brush with reserved glaze. Stir vegetables. Return to oven.
  7. Roast for another 15-20 minutes until chicken reaches 165°F (74°C) and vegetables are tender. For extra crispy skin, broil for 2-3 minutes, watching closely.
  8. Rest and serve: Let rest for 5 minutes. Garnish with fresh parsley or thyme and flaky sea salt. Serve directly from sheet pan or transfer to a platter.

Notes

Pat chicken dry for crispy skin. Cut vegetables uniformly for even cooking. Don’t skip flipping halfway through. Watch garlic to prevent burning. Use a meat thermometer for perfect doneness. Let rest 5 minutes before serving. For vegetarian version, swap chicken with extra-firm tofu or chickpeas. For spicy kick, add ½ teaspoon red pepper flakes to glaze. Leftovers keep up to 4 days in refrigerator.
