Instructions

  1. Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease well.
  2. Make the cream cheese filling: In a medium bowl, beat 8 oz softened cream cheese with 1/4 cup sugar until smooth and creamy (about 2-3 minutes). Add 1 egg yolk and 1/2 teaspoon vanilla extract, then beat until fully combined and silky. Set aside.
  3. Prepare the pumpkin batter: In a large mixing bowl, whisk together 2 cups flour, 3/4 cup granulated sugar, 1/2 cup packed brown sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda, 2 teaspoons cinnamon, 1/2 teaspoon nutmeg, and 1/2 teaspoon salt.
