This cozy sausage and potato soup with kale is a hearty, one-pot meal that comes together in about 40 minutes. The naturally creamy broth, made by mashing some of the potatoes, is packed with savory sausage, tender potatoes, and earthy kale.

  • 1/2 teaspoon smoked paprika

  • 4 cups chopped kale, stems removed
  • 1/2 cup heavy cream (optional)
  • Fresh parsley, chopped, for garnish
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Brown the sausage: Heat the olive oil in a Dutch oven over medium-high heat. Add the sausage, breaking it up with a wooden spoon as it cooks. Cook for 5-7 minutes, until browned and cooked through. Transfer the sausage to a plate, leaving the rendered fat in the pot.
  2. Sauté the aromatics: Reduce heat to medium. Add the diced onion and cook for 3-4 minutes until soft and translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Add the liquids: Pour in the chicken broth and water, scraping the bottom of the pot to release any browned bits.
  4. Add the potatoes and seasonings: Add the cubed potatoes, dried thyme, smoked paprika, black pepper, and salt. Stir together. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until potatoes are tender.
  5. Mash some potatoes: Remove the pot from heat. Using a potato masher or fork, gently mash about one-third of the potatoes right in the pot.
  6. Add the kale and sausage: Stir in the chopped kale and cooked sausage. Return to medium heat and cook for 3-4 minutes until kale is wilted and tender.
  7. Finish with cream (optional): If using heavy cream, stir it in. Let the soup simmer for another 2 minutes to heat through. Taste and adjust seasoning with more salt and pepper if needed.
  8. Serve: Ladle the soup into bowls, garnish with fresh parsley and a sprinkle of Parmesan cheese if desired. Serve hot with crusty bread or a side salad.

Notes

For best results, brown the sausage well to create flavorful browned bits. Cut potatoes evenly for even cooking. Taste before adding extra salt as sausage and broth can be salty. The potato-mashing trick thickens the broth naturally. Add kale at the end to avoid overcooking. This soup tastes even better the next day.
