  • 2 cups water
  • 1 medium yellow onion, diced

  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • 2 bay leaves
  • Salt and freshly ground black pepper, to taste
  • 1 cup heavy cream or half-and-half
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. Prep the veggies: Dice the onion, carrots, and celery into small, uniform pieces. Mince the garlic.
  2. Layer the ingredients in the slow cooker: Place the chicken in the bottom. Scatter the diced onion, carrots, celery, and minced garlic over the top. Sprinkle with dried thyme, rosemary, and a pinch of salt and pepper. Nestle the bay leaves in.
  3. Add the rice and liquid: Pour the rinsed wild rice blend evenly over the top. Carefully pour in the chicken broth and water. Give everything a gentle stir to combine the liquids with the seasonings.
  4. Cook low and slow: Cover and cook on LOW for 6-7 hours or on HIGH for 4-5 hours, until the rice is tender and the chicken is cooked through.
  5. Shred the chicken: Remove the chicken from the slow cooker using tongs. Shred with two forks. Discard the bay leaves.
  6. Finish with cream: Return the shredded chicken to the slow cooker. In a small bowl, whisk together the heavy cream and flour (if using) until smooth. Pour into the soup and stir. Cook on HIGH, uncovered, for 10-15 minutes until thickened.
  7. Season and serve: Taste and adjust salt and pepper. Ladle into bowls, garnish with fresh parsley, and serve with lemon wedges.

Notes

For best texture, cook on LOW. Add cream at the end to prevent curdling. Soup thickens as it sits; add broth when reheating. Freeze before adding cream for best results.
