This incredibly rich, deeply flavored apple butter is made effortlessly in a slow cooker with the peels on for added color and pectin. It’s the perfect fall spread for biscuits, cheese boards, or gifting.

Ingredients

Scale
  • 3 pounds apples (about 6–8 medium), a mix of sweet and tart varieties like Honeycrisp, Fuji, and Granny Smith, unpeeled, cored, and chopped into 1-inch chunks
  • 1 cup granulated sugar (can reduce to 3/4 cup)
  • 2 tablespoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon vanilla extract

Instructions

  1. Wash apples thoroughly. Quarter each apple and remove cores and seeds. Chop into rough 1-inch chunks (no need to peel).
  2. Add chopped apples to a 4-6 quart slow cooker. Sprinkle sugar, cinnamon, nutmeg, cloves, and salt over the top. Add lemon juice and vanilla extract. Stir to coat apples evenly.
  3. Cover and cook on low for 8-10 hours, until apples are very soft and falling apart. Stir once or twice if possible.
  4. Using an immersion blender, puree the cooked apples directly in the slow cooker until smooth. Alternatively, transfer in batches to a regular blender, leaving lid slightly ajar to let steam escape.
  5. If apple butter is too thin, cook on high with lid off for 1-2 hours, stirring occasionally, until desired thickness is reached. It will thicken further as it cools.
  6. Taste and adjust spices or sweetness as desired.
  7. Let cool completely before transferring to clean jars. Seal tightly and refrigerate for up to 3 weeks, or freeze for up to 6 months.

Notes

For canning, add 1 tablespoon bottled lemon juice per pint jar and process in a water bath for 10 minutes. The apple butter tastes even better the next day as flavors meld. Optional additions: cinnamon stick, apple cider vinegar, or bourbon.
