Instructions

  1. Preheat oven to 375°F (190°C). Position a rack in the middle of the oven.
  2. Prepare the apples: Peel, core, and chop 2 medium apples into ½-inch chunks. Place in a mixing bowl.
  3. Season the apples: Add 3 tablespoons packed brown sugar, 2 tablespoons all-purpose flour, and 1 teaspoon ground cinnamon. If using vanilla extract or lemon juice, add them now. Toss until apples are evenly coated.
  4. Transfer to baking dish: Spread the apple mixture evenly in a greased small baking dish (about 4-5 cup capacity). Do not pack down.
  5. Make the oat crumble topping: In a second bowl, combine ½ cup rolled oats, ¼ cup all-purpose flour, ¼ cup packed brown sugar, and ¼ teaspoon salt. Stir with a fork.
  6. Cut in the butter: Add 3 tablespoons cold, cubed unsalted butter to the dry mixture. Use a pastry cutter, fork, or fingertips to work the butter into the dry ingredients until the mixture resembles coarse meal with pea-sized butter pieces.
  7. Top the apples: Sprinkle the oat crumble evenly over the apples. Do not press down.
  8. Bake: Place the dish on a baking sheet and bake for 25-30 minutes. At the 20-minute mark, check the topping; if browning too quickly, tent loosely with foil. The crisp is done when apples are tender and bubbling around the edges, and topping is golden brown and crispy.
