Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, toss the sliced peaches with 1 cup granulated sugar, 2 tablespoons flour, ground cinnamon, and fresh lemon juice. Mix gently and let sit while preparing the crust.
  3. In a medium bowl, whisk together 1 cup flour, 1/4 cup sugar, baking powder, salt, and the scraped seeds from the vanilla bean pod.
  4. Cut in the cold cubed butter using fingers or a pastry cutter until the mixture resembles coarse crumbs with some pea-sized pieces.
  5. Add the milk and stir just until the dough comes together; do not overmix.
  6. Pour the peach mixture evenly into a 9×9-inch baking dish.
