Cozy Sweet Potato Turkey Chili – The Best Easy Weeknight Dinner

This isn’t just another turkey chili recipe. This is the one that makes you close your eyes after the first spoonful. It’s the kind of meal that feels like a hug in a bowl, especially on a cold evening when all you want is something warm and satisfying.

  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 lb (450g) ground turkey (93% lean)
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch cubes (about 3 cups)
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (15-ounce) can fire-roasted diced tomatoes, undrained
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper, to taste
  • 2 cups low-sodium chicken broth
  • 1 cup water
  • Optional toppings: shredded cheddar cheese, sour cream or Greek yogurt, chopped fresh cilantro, sliced avocado, diced red onion, or a squeeze of lime juice

Instructions

  1. Sauté the Aromatics (5 minutes): Heat the olive oil in your large pot over medium heat. Add the diced onion and cook for 3-4 minutes, until softened and translucent. Add the minced garlic and diced red bell pepper, and cook for another minute until fragrant. Don’t let the garlic burn!
  2. Brown the Turkey (5-7 minutes): Add the ground turkey to the pot. Break it apart with your wooden spoon and cook until it’s no longer pink. This should take about 5-7 minutes. I like to let it get a little bit of brown color on it for extra flavor. If there’s a lot of fat, you can drain it off, but with 93% lean turkey, there’s usually very little.
  3. Bloom the Spices (1 minute): This is a crucial step! Sprinkle the chili powder, cumin, smoked paprika, oregano, and cayenne pepper (if using) over the cooked turkey and vegetables. Stir constantly for about 30-60 seconds until the spices are fragrant. This ‘blooming’ step wakes up the spices and makes them much more flavorful.
  4. Add the Sweet Potatoes and Beans (2 minutes): Stir in the diced sweet potatoes, drained black beans, and drained kidney beans. Give everything a good mix so the sweet potatoes are coated in the spices.
  5. Add the Tomatoes and Liquid (2 minutes): Pour in the undrained fire-roasted diced tomatoes, chicken broth, and water. Stir to combine everything. The liquid should just about cover the ingredients. If it looks a little dry, add another splash of broth or water.
  6. Simmer the Chili (30-40 minutes): Bring the chili to a gentle boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for 30-40 minutes, stirring occasionally. The chili is ready when the sweet potatoes are fork-tender and the flavors have melded together beautifully. The chili will also thicken as it simmers.
  7. Season and Serve (2 minutes): Taste the chili and add salt and freshly ground black pepper to your liking. Remember that the beans and broth already have some salt, so start with a little and add more as needed. Ladle the chili into bowls and top with your favorite toppings.

Notes

For the best texture, look for firm, medium-sized sweet potatoes. They hold their shape better during cooking. If you’re out of chicken broth, vegetable broth works perfectly. I personally love using fire-roasted tomatoes for that extra layer of smoky flavor, but regular diced tomatoes are fine in a pinch. Don’t skip the spice bloom – it deepens their flavor and removes any raw, dusty taste. Cut the sweet potatoes evenly into uniform 1/2-inch cubes for even cooking. Let it simmer gently, not boil, to avoid mushy sweet potatoes. Always drain and rinse your canned beans! This chili tastes even better the next day. For a vegetarian version, omit the turkey and add an extra can of beans or frozen corn. For more heat, add a diced jalapeño or chipotle peppers in adobo sauce.
