Cozy Thermos Chicken Noodle Soup

A warm, comforting chicken noodle soup perfect for school lunchboxes, designed to stay hot in a thermos and packed with wholesome ingredients.

  • 4 cups (32 fl oz) homemade or store-bought chicken broth (low-sodium preferred)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and sliced thin
  • 2 celery stalks, thinly sliced
  • 1 tsp dried thyme or 1 tbsp fresh thyme leaves
  • 1 bay leaf (optional)
  • 1 cup cooked chicken, shredded or chopped
  • 3/4 cup egg noodles or small pasta shapes
  • Salt and freshly ground black pepper, to taste
  • 1 tbsp fresh parsley, chopped
  • A squeeze of fresh lemon juice (optional)

Instructions

  1. Prepare the vegetables: finely chop the onion, mince the garlic, peel and slice the carrots, and slice the celery (about 5 minutes).
  2. Heat 1 tablespoon of olive oil or butter in a medium saucepan over medium heat. Add onions, garlic, carrots, and celery. Stir occasionally until onions turn translucent and veggies soften, about 4-5 minutes.
  3. Pour in the chicken broth and add thyme and bay leaf. Bring to a gentle boil, then reduce heat to low and simmer for 10 minutes.
  4. Add the egg noodles directly into the simmering broth. Stir occasionally to prevent sticking. Cook until noodles are tender but still firm (al dente), about 7-8 minutes.
  5. Stir in the cooked chicken, season with salt and pepper to taste, and heat through for another 2 minutes.
  6. Remove the bay leaf. Stir in fresh parsley and, if desired, a squeeze of lemon juice. Adjust seasoning if needed.
  7. Preheat your thermos by filling it with boiling water and letting it sit for a few minutes. Pour out the water and immediately fill the thermos with hot soup. Seal tightly to keep warm.

Notes

Preheat the thermos with boiling water before filling to keep soup warm longer. Cook noodles just until al dente to prevent mushiness in the thermos. Shred chicken by hand for better texture. For best noodle texture, add noodles fresh in the morning if prepping soup the night before. Add a splash of hot water if soup reduces too much during simmering. Substitute gluten-free noodles or spiralized zucchini for gluten-free or lower-carb options. Use vegetable broth and tofu or beans for a vegetarian version.
