A creamy, cheesy chili dip made in a crockpot with Velveeta cheese, Rotel tomatoes, and optional ground beef. Perfect for parties and game day snacks.

  • 16 oz Velveeta cheese, cut into cubes
  • 1 can (10 oz) Rotel diced tomatoes and green chilies, undrained
  • 1/2 pound ground beef, browned and drained (optional)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 small jalapeño pepper, seeded and diced (optional)
  • 1/4 cup milk (60 ml), to loosen dip if needed
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste

Instructions

  1. Heat a skillet over medium heat. Add ground beef and cook until no longer pink, breaking it apart with a spatula. Drain excess fat.
  2. Add diced onion and minced garlic to the skillet and sauté until translucent and fragrant, about 3-4 minutes. If using jalapeño, add it and cook for an additional minute.
  3. Place cubed Velveeta cheese into the crockpot. Pour the undrained can of Rotel tomatoes and green chilies over the cheese.
  4. Spoon the cooked meat and sautéed veggies evenly over the cheese and tomatoes in the crockpot.
  5. Sprinkle chili powder, cumin, salt, and pepper over the mixture. Stir gently to combine, keeping cheese cubes somewhat intact.
  6. Cover and cook on low heat for 2 hours, stirring every 30 minutes to help cheese melt evenly and prevent sticking.
  7. If the dip is too thick, stir in milk gradually until desired creamy texture is reached.
  8. Taste and adjust seasoning if needed. Add extra heat with hot sauce or diced jalapeño if desired.
  9. Serve warm with tortilla chips, crackers, or sliced veggies.

Notes

Stir every 30 minutes during cooking to prevent burning and ensure even melting. For a vegetarian version, omit ground beef and add extra veggies or beans. Use reduced-fat Velveeta or blend with cream cheese to lighten. Can be made on stovetop with constant stirring if no slow cooker is available. Store leftovers in airtight container in refrigerator up to 4 days. Reheat gently and add milk if dip thickens.
