  • 1 cup milk of choice (whole milk, oat milk, or almond milk)
  • 1/2 cup plain Greek yogurt (or dairy-free yogurt)
  • 2 tablespoons natural peanut butter (creamy or crunchy)
  • 2 tablespoons maple syrup (or honey)
  • 1/2 teaspoon vanilla extract (pure preferred)
  • 1/4 teaspoon ground cinnamon
  • Pinch of sea salt
  • 1 medium ripe banana (mashed)
  • 1 tablespoon chia seeds (optional)
  • For topping: 1/2 banana sliced, 1 tablespoon peanut butter warmed, 1 tablespoon chopped peanuts, drizzle of maple syrup, sprinkle of cinnamon

Instructions

  1. Mash the banana first: In a small bowl, mash the very ripe banana with a fork until mostly smooth with just a few tiny lumps.
  2. Combine the wet ingredients: In a mason jar or mixing bowl, add the mashed banana, milk, Greek yogurt, peanut butter, maple syrup, and vanilla extract. Stir until the peanut butter is fully incorporated.
  3. Add the dry ingredients: Pour in the rolled oats, chia seeds (if using), cinnamon, and a pinch of salt. Stir thoroughly until every oat is coated and there are no dry pockets.
  4. Seal and refrigerate: Put the lid on the jar and refrigerate for at least 6 hours, but overnight (8-12 hours) is best.
  5. Give it a stir in the morning: Take the jar out of the fridge and stir well. If too thick, add a splash of milk to reach desired consistency.
  6. Add your toppings: Slice the remaining half banana on top, drizzle with warmed peanut butter, sprinkle with chopped peanuts and cinnamon, and add extra maple syrup if desired.
  7. Eat cold or warm it up: Enjoy straight from the fridge or microwave the jar (lid off) for 45-60 seconds for a warm version.

Notes

Use very ripe bananas with brown spots for best sweetness and texture. Natural peanut butter (just peanuts and salt) works best. For best results, let oats sit for at least 8 hours. Toppings should be added just before serving to maintain crunch and freshness. The oats keep in the fridge for up to 5 days.
