A quick and easy 5-minute breakfast that’s creamy, protein-packed, and perfect for busy mornings. Made with rolled oats, peanut butter, Greek yogurt, and vanilla protein powder, this overnight oats recipe tastes like dessert but keeps you full until lunch.

  • 1/2 cup (50g) rolled oats (old-fashioned oats)
  • 1/2 cup (120ml) milk of your choice (whole milk, almond milk, oat milk, or coconut milk)
  • 1/4 cup (60g) plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons (32g) creamy peanut butter (natural or regular)
  • 1 scoop (about 30g) vanilla protein powder (optional, whey or plant-based)
  • 1 tablespoon (15ml) honey or maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of sea salt
  • For serving (optional): sliced banana, fresh berries, extra peanut butter drizzle, chopped peanuts or almonds, cinnamon, cacao nibs

Instructions

  1. In a mason jar or airtight container, add the rolled oats, chia seeds (if using), and a tiny pinch of sea salt. If using protein powder, add it here. Stir to combine.
  2. Spoon the peanut butter on top of the dry ingredients. Do not stir yet.
  3. Pour in the milk, Greek yogurt, and honey or maple syrup. Ensure the liquid covers the dry ingredients completely; add an extra splash of milk if needed.
  4. Stir vigorously for 30 seconds to 1 minute until the peanut butter is fully incorporated and the mixture is smooth with no dry patches or clumps.
  5. Taste and adjust sweetness or peanut butter as desired.
  6. Seal the container and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  7. In the morning, stir the oats well. If too thick, add a splash of milk; if too thin, let sit for another 30 minutes or add more oats.
  8. Add desired toppings (e.g., sliced banana, extra peanut butter, chopped nuts, cinnamon) and serve cold.

Notes

For best texture, use rolled oats (not instant or steel-cut). Stir thoroughly to avoid clumps. If protein powder tends to clump, mix it with a tablespoon of milk first to form a paste. Batch prep up to 5 days in advance; store without toppings. To reheat, microwave for 45-60 seconds with a splash of milk.
