A quick and easy make-ahead breakfast that combines creamy peanut butter, sweet banana, and soft oats for a delicious, no-cook meal perfect for busy mornings or hosting guests.

  • 1 cup (90g) rolled old-fashioned oats
  • 1 large ripe banana (about 120g mashed)
  • 1/4 cup (64g) creamy peanut butter
  • 1 cup (240ml) milk of choice
  • 1/4 cup (60g) plain Greek yogurt
  • 1 tablespoon (12g) chia seeds (optional)
  • 1–2 tablespoons (15-30ml) maple syrup or honey (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana: In a medium mixing bowl, mash the ripe banana with a fork until smooth and almost liquid.
  2. Combine the wet ingredients: Add peanut butter, Greek yogurt, milk, maple syrup (if using), and vanilla extract to the mashed banana. Stir until completely smooth and well combined.
  3. Add the dry ingredients: Pour in rolled oats, chia seeds (if using), and a pinch of salt. Stir until all oats are fully coated. The mixture will be liquidy.
  4. Divide into jars: Spoon the mixture evenly into two pint-sized mason jars or airtight containers, leaving about 1/2 inch of space at the top.
  5. Refrigerate overnight: Seal the jars and refrigerate for at least 6 hours, preferably 8-12 hours.
  6. Serve and enjoy: The next morning, stir the oats. If too thick, add a splash of milk. Top with desired toppings and enjoy cold or at room temperature.

Notes

Use very ripe bananas for natural sweetness. Mash banana first for a smooth base. Rolled oats are essential; quick oats will become mushy. For a thicker texture, add extra chia seeds. Oats keep in the fridge for up to 5 days.
