A creamy, garlicky spinach dip served in a sourdough bread bowl with a spooky spiderweb design made from sour cream. Perfect for Halloween parties, this quick and easy appetizer comes together in under 30 minutes and is always a crowd-pleaser.

Ingredients

Scale
  • 16 ounces cream cheese, softened to room temperature
  • 1 cup sour cream
  • 10 ounces frozen spinach, thawed and squeezed completely dry
  • 1/2 cup mayonnaise
  • 4 cloves garlic, minced fresh
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 1 large round sourdough bread bowl (about 1.5 pounds)
  • 1/4 cup additional sour cream (for spiderweb design)

Instructions

  1. Preheat your oven to 375°F (190°C). Let cream cheese soften on the counter for about 20 minutes.
  2. Thaw frozen spinach completely. Place in a clean kitchen towel, gather corners, and twist to squeeze out all water. Fluff squeezed spinach with fingers.
  3. In a large mixing bowl, beat softened cream cheese with a hand mixer on medium speed until smooth and fluffy, about 2 minutes. Scrape down sides halfway through.
  4. Add sour cream, mayonnaise, minced garlic, onion powder, salt, and pepper. Mix on low speed until combined, about 30 seconds. Do not overmix.
  5. Fold in squeezed spinach, mozzarella cheese, and Parmesan cheese with a spatula until evenly distributed. Taste and adjust salt and pepper if needed.
  6. Cut a circle into the top of the sourdough loaf, about 1 inch from the edge. Remove top and set aside. Hollow out inside of bread, leaving a 1-inch thick wall. Tear removed bread into bite-sized pieces and place on a baking sheet.
  7. Spoon spinach dip mixture into hollowed bread bowl, mounding slightly on top. Wrap exposed edges of bread bowl with aluminum foil strips. Place filled bread bowl on baking sheet alongside bread pieces.
  8. Bake for 20-25 minutes, until dip is hot and bubbly and bread pieces are golden and crispy.
  9. Remove from oven and let cool for 5 minutes. Fill a squeeze bottle or ziplock bag with additional 1/4 cup sour cream. Pipe a small circle in the center, then concentric circles moving outward, spacing about 1 inch apart. Drag a toothpick or knife from center outward through all circles to create web effect. Repeat every 1-2 inches around the dip.
  10. Serve immediately on a platter surrounded by toasted bread pieces and optional veggies.

Notes

Squeeze spinach completely dry to avoid watery dip. Let cream cheese soften fully for smooth texture. Choose a dense, crusty bread bowl to prevent collapse. For the spiderweb, practice on a plate first if needed. Dip can be made a day ahead and baked fresh.
