  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Wash and cut 2 pounds of swamp potatoes into roughly 1-inch chunks. No need to peel.
  2. Slice 12 ounces of andouille or smoked sausage into 1/4-inch rounds.
  3. Add the potatoes and sausage slices to the crockpot. Pour in 1 cup of chicken broth evenly over the top.
  4. Sprinkle 1 teaspoon onion powder, 1 teaspoon garlic powder, 1 teaspoon salt, and 1/2 teaspoon black pepper over the mixture. Toss lightly to distribute.
  5. Cut 2 tablespoons butter into small pieces and dot over the potatoes. Spread 8 ounces softened cream cheese in chunks on top.
  6. Cover and set crockpot to low heat. Cook for 6 hours, stirring gently halfway through to prevent sticking.
  7. Optional: For a creamier texture, mash the potatoes lightly with a potato masher or hand mixer right in the crockpot.
  8. Sprinkle chopped fresh parsley on top before serving.

Use room temperature cream cheese for better blending. Stir gently halfway through cooking to prevent sticking. If crockpot runs hot, check potatoes at 4 hours and switch to warm if tender.
