  • ½ cup panko breadcrumbs (gluten-free panko optional)
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels to ensure crispy skin. (10 minutes)
  2. In a medium bowl, combine minced garlic, grated Parmesan, panko breadcrumbs, dried Italian herbs, salt, pepper, and lemon zest if using. Stir well to mix evenly. (5 minutes)
  3. Rub the chicken thighs all over with olive oil to help the coating stick and promote browning. (3 minutes)

  8. Let the chicken rest for 5 minutes after cooking to lock in juices and keep the coating crispy. (5 minutes)
