  • 1 tablespoon olive oil
  • 1 medium yellow onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional)
  • 6 slices provolone cheese, cut into strips
  • 1 package (about 1214) egg roll wrappers
  • 1 tablespoon water, for sealing
  • Avocado oil spray (or any high-heat cooking spray)
  • Warm marinara sauce or ketchup for dipping (optional)
  • Ranch dressing or blue cheese dip (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Prepare the Beef and Vegetables: In a large skillet, heat olive oil over medium-high heat. Add sliced beef in a single layer (work in batches if needed). Cook for 2-3 minutes per side until browned. Remove beef and set aside. In the same pan, add sliced onions and bell peppers. Cook for 5-6 minutes until soft and starting to caramelize. Add minced garlic and cook for 30 seconds until fragrant.
  2. Combine the Filling: Return cooked beef to the pan with vegetables. Add salt, black pepper, onion powder, and smoked paprika. Stir together and cook for 1 minute. Remove from heat and let cool for a few minutes.
  3. Assemble the Egg Rolls: Lay an egg roll wrapper in a diamond shape. Place a slice of provolone cheese in the center. Top with about 2 tablespoons of beef mixture. Moisten edges with water. Fold bottom corner up over filling, fold in side corners, then roll tightly toward top corner. Press to seal. Place seam-side down on a baking sheet. Repeat with remaining wrappers and filling.
  4. Preheat the Air Fryer: Preheat air fryer to 375°F (190°C) for 3 minutes.
  5. Cook the Egg Rolls: Lightly spray air fryer basket with avocado oil. Place egg rolls in a single layer, leaving space between each. Spray tops with oil. Cook for 5 minutes, then flip. Spray other side with oil and cook for another 3-5 minutes until golden brown and crispy (internal temperature should reach 165°F/74°C).
  6. Rest and Serve: Let egg rolls rest in air fryer basket for 1-2 minutes. Transfer to a plate and serve hot with dipping sauce.

Notes

Let the filling cool before assembling to prevent soggy wrappers. Don’t overfill—use about 2 tablespoons per wrapper. Seal tightly to prevent bursting. Spray generously with oil for a crispy crust. Flip halfway through cooking for even browning. Work in batches to avoid overcrowding the air fryer.
