Instructions

  1. Preheat your oven to 425°F (220°C). Place a wire rack on a rimmed baking sheet and spray it lightly with olive oil cooking spray.
  2. Place each chicken breast between two sheets of plastic wrap. Using a meat mallet or rolling pin, pound them to an even thickness of about 1/2 inch (1.25 cm).
  3. In the first shallow bowl, whisk together the buttermilk, egg, Dijon mustard, salt, and pepper until smooth. In the second bowl, combine the panko breadcrumbs, grated Parmesan, garlic powder, onion powder, Italian seasoning, paprika, and cayenne (if using). Mix with a fork until evenly distributed.
  4. Working with one piece at a time, dip the chicken into the buttermilk mixture, letting any excess drip off. Then transfer it to the breadcrumb mixture. Press the breadcrumbs firmly onto both sides.
