  • 1/2 cup (125g) natural peanut butter
  • 1/3 cup (113g) honey
  • 1 teaspoon vanilla extract
  • 1/4 cup (43g) mini chocolate chips (optional)

Instructions

  1. In a mixing bowl, combine 1 1/2 cups (135g) rolled oats and 1/2 cup (125g) natural peanut butter. Stir until oats are evenly coated, about 2 minutes.
  2. Add 1/3 cup (113g) honey and 1 teaspoon vanilla extract. Mix thoroughly for 2-3 minutes until sticky and holds together. Add more honey if too dry.
  3. Gently fold in 1/4 cup (43g) mini chocolate chips without overmixing.
  4. Scoop about 1 tablespoon (15g) of mixture and roll into balls. Place on parchment-lined baking sheet or plate.
  5. Refrigerate for at least 30 minutes to firm up. Alternatively, freeze for 15 minutes but avoid freezing solid.
  6. Enjoy chilled or at room temperature. Store in an airtight container in the fridge for up to one week.
