  • 2 tablespoons pumpkin purée (100% pure, not pumpkin pie filling)
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice
  • Pinch of salt
  • Cold brew or espresso (for serving)

Instructions

  1. In a small bowl or wide-mouth mason jar, combine the heavy cream (or half-and-half), pumpkin purée, maple syrup, vanilla extract, pumpkin pie spice, and a pinch of salt.
  2. Stir with a spoon to break up the pumpkin purée and distribute the spices evenly.
  3. Using a handheld milk frother, submerge the tip just below the surface and froth in a gentle circular motion for 30-45 seconds until the mixture doubles in volume and forms soft peaks. Alternatively, use a French press (pump plunger vigorously for 60 seconds), a mason jar (shake hard for 30-45 seconds), or a wire whisk.
  4. Stop frothing when the foam is thick enough to coat the back of a spoon. Be careful not to over-froth.
  5. Pour cold brew or espresso into a serving glass, filling it about 2/3 full.
  6. Gently dollop the pumpkin cream cold foam on top of the coffee. Sprinkle with extra pumpkin pie spice or cinnamon if desired. Serve immediately.

Notes

For best results, use very cold heavy cream. Do not over-sweeten; start with 1 tablespoon maple syrup. Make foam right before serving as it will deflate after about 10 minutes. For a smoother texture, strain pumpkin purée through a fine-mesh sieve. Leftover foam can be stored in an airtight container in the refrigerator for up to 24 hours and re-frothed briefly.
