Ingredients

Scale
  • 2 pounds (about 900g) chicken wings, fresh or thawed
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 3 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • ½ cup (50g) grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

  1. Pat the chicken wings completely dry with paper towels. Place in a large mixing bowl.
  2. In a small bowl, whisk together baking powder, garlic powder, onion powder, paprika, salt, and black pepper.
  3. Sprinkle the dry rub over the wings and toss until evenly coated. Let sit for 5 minutes.
  4. Preheat the air fryer to 380°F (190°C) for 3 minutes.
  5. Arrange the wings in a single layer in the air fryer basket. Do not overcrowd.
  6. Cook at 380°F (190°C) for 12 minutes.
  7. Flip the wings and increase the temperature to 400°F (200°C). Cook for another 8-10 minutes until deeply golden and crispy.
  8. While wings cook, melt butter in a small saucepan over low heat. Add minced garlic and cook for 30 seconds until fragrant. Remove from heat.
  9. In a clean large bowl, toss the cooked wings with the garlic butter. Sprinkle with Parmesan cheese and toss again.
  10. Transfer to a serving platter, garnish with fresh parsley, and serve immediately.

Notes

Pat wings dry thoroughly for maximum crispiness. Do not skip the baking powder. Add Parmesan after cooking to prevent burning. For oven method, bake at 425°F (220°C) for 45-50 minutes on a wire rack.
