  • 34 slices deli-style thinly sliced turkey
  • Handful fresh spinach leaves (washed and dried)
  • 4 oz softened cream cheese
  • 1 tablespoon mayonnaise (optional)
  • 1 tablespoon chopped fresh parsley or dill
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • Optional add-ins: thinly sliced red bell pepper, shredded cheddar cheese

Instructions

  1. In a mixing bowl, combine 4 oz softened cream cheese, 1 tablespoon mayonnaise (optional), 1 tablespoon chopped fresh parsley or dill, 1/2 teaspoon garlic powder, and a pinch of salt and pepper. Mix until smooth and well blended.
  2. Place one large flour tortilla flat on a clean cutting board or work surface.
  3. Spread an even layer of the cream cheese mixture over the entire tortilla surface, leaving about 1/2 inch border around the edges.
  4. Layer 3-4 slices of turkey evenly over the spread, then top with a handful of fresh spinach leaves. Add optional red bell pepper slices or shredded cheddar cheese if desired.
  5. Starting from one edge, roll the tortilla tightly but gently until you reach the other side, forming a log shape.
  6. Wrap the rolled tortilla in plastic wrap and refrigerate for at least 15 minutes.
  7. Unwrap and use a serrated knife to cut into 1-inch thick pinwheels, aiming for about 8 pinwheels per roll.
  8. Arrange the pinwheels on a serving platter and serve chilled or at room temperature.

Notes

Soften tortillas by wrapping in a damp paper towel and microwaving for 15 seconds to prevent cracking. Chill rolled tortillas before slicing to keep pinwheels intact. Use a serrated knife with a gentle sawing motion to avoid squishing. Cream cheese should be softened for easy spreading.
