A quick and easy apple crisp with nutty brown butter and crunchy oat streusel, perfect for fall gatherings or a comforting weeknight dessert.

Ingredients

Scale
  • 6 medium apples, mixed varieties (e.g., 3 Granny Smith and 3 Honeycrisp)
  • 1/4 cup granulated sugar (65 grams)
  • 1/4 cup light brown sugar, packed (55 grams)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (9 grams)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (1 stick, 113 grams)
  • 1 cup old-fashioned rolled oats (90 grams)
  • 3/4 cup all-purpose flour (95 grams)
  • 1/2 cup light brown sugar, packed (110 grams)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly butter an 8×8 or 9×9 baking dish.
  2. Brown the butter: Place 1/2 cup unsalted butter in a medium saucepan over medium heat. Melt completely, then swirl occasionally. After 4-5 minutes, the butter will crackle and pop, then turn golden to deep amber with brown specks. Remove from heat immediately and pour into a heat-safe bowl to stop cooking.
  3. Prepare the apples: Wash, core, and cut apples into 1/2-inch chunks (peeling optional). Toss with lemon juice to prevent browning.
  4. Make the filling: In a medium bowl, whisk together granulated sugar, 1/4 cup brown sugar, cornstarch, 1 teaspoon cinnamon, nutmeg, and 1/4 teaspoon salt. Pour over apples and toss to coat. Let sit while making streusel.
  5. Make the streusel: In a large bowl, combine oats, flour, 1/2 cup brown sugar, 1/2 teaspoon cinnamon, 1/4 teaspoon salt, and baking powder. Whisk to combine. Pour warm brown butter over dry ingredients and stir until moistened and clumpy. Pinch a few larger clumps with your fingers.
  6. Assemble the crisp: Pour apple mixture into prepared dish and spread evenly. Sprinkle streusel evenly over the top without pressing down.
  7. Bake: Place dish on a baking sheet. Bake for 38-42 minutes until filling bubbles at edges and streusel is deep golden brown. If streusel browns too quickly, tent with foil for last 10 minutes.
  8. Cool: Let crisp cool on a wire rack for at least 15-20 minutes before serving.

Notes

For best results, use a mix of tart and sweet apples. Watch the brown butter closely to avoid burning. Let the crisp rest before serving to allow the filling to set. Double the streusel if you prefer extra crunch.
