These Cranberry Brie Bites with Puff Pastry are buttery, creamy, and just the right amount of tangy — all wrapped up in a golden shell that shatters when you bite into it. They’re the kind of appetizer that changes minds without even trying.

  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, rind on
  • 1/2 cup whole berry cranberry sauce
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 large egg, beaten
  • Flaky sea salt, for finishing
  • Optional: 2 tablespoons honey or balsamic glaze for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Thaw the puff pastry properly. Take one sheet of frozen puff pastry out of the freezer and let it thaw in the fridge for about 30 minutes, or at room temperature for 15-20 minutes. It should be cold but pliable.
  3. Cut the brie into small cubes. Slice the brie into 1/2-inch cubes, leaving the rind on. You’ll get about 20-24 cubes from a 4-ounce wedge.
  4. Prepare the cranberry sauce. If using canned cranberry sauce, stir it well to break up any large chunks. If it seems runny, transfer it to a small saucepan and simmer over medium heat for 3-4 minutes until thickened. Let it cool slightly before using.
  5. Roll out the puff pastry. On a lightly floured surface, gently roll the puff pastry into a 10×10-inch square. Cut the square into 16 equal pieces (4 rows by 4 rows). Each piece should be about 2.5 inches square.
  6. Place the pastry squares on your prepared baking sheet. Space them about 1 inch apart. If using a mini muffin tin, gently press each square into a cup, letting the corners stick up.
  7. Add the brie cubes. Place one brie cube in the center of each pastry square.
  8. Top with cranberry sauce. Spoon about 1/2 teaspoon of cranberry sauce on top of each brie cube.
  9. Brush with egg wash. In a small bowl, beat the egg with 1 tablespoon of water. Using a pastry brush, lightly brush the exposed pastry edges — not the filling — with the egg wash.
  10. Sprinkle with rosemary and salt. Evenly distribute the chopped rosemary over each bite, then finish with a pinch of flaky sea salt.
  11. Bake for 12-15 minutes. Bake until the pastry is puffed and golden brown, and the brie is melted and bubbly. Rotate the pan halfway through for even browning.
  12. Cool for 5 minutes before serving. Let the bites rest on the baking sheet for 5 minutes.
  13. Optional: Drizzle with honey or balsamic glaze. For an extra layer of flavor, drizzle a tiny bit of honey or balsamic glaze over the warm bites.

Keep everything cold for flaky pastry. Don’t skip the egg wash for golden color. Watch the brie — different brands melt at different rates. You can assemble these bites up to 4 hours ahead of time and refrigerate. Bake straight from the fridge, adding 2-3 minutes to the baking time. Leftover bites can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 5-7 minutes. Freeze unbaked bites on a baking sheet until solid, then transfer to a freezer bag. Bake from frozen, adding 3-5 minutes to the baking time.
