  • 1 (15-ounce) can white beans (cannellini or great northern), drained and rinsed
  • 1 (15-ounce) can corn, drained (or 1.5 cups frozen corn)
  • 2 cups low-sodium chicken broth
  • 1 medium yellow or white onion, diced
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon dried oregano (preferably Mexican oregano)
  • Salt and black pepper, to taste
  • 2 limes (for crema and garnish)
  • 1/2 cup sour cream or full-fat Greek yogurt
  • 1/4 cup chopped fresh cilantro, plus more for garnish
  • Optional toppings: shredded cheese, diced avocado, tortilla chips, sliced jalapeños, extra lime wedges

Instructions

  1. Prep your ingredients (10 minutes): Dice the onion and mince the garlic. Drain and rinse both cans of beans. Drain the corn. Set everything near the slow cooker.
  2. Build the base (5 minutes): Add the diced onion, minced garlic, enchilada sauce, diced tomatoes with green chiles, black beans, corn, cumin, chili powder, oregano, and chicken broth to the slow cooker. Stir until well combined.
  3. Add the chicken (2 minutes): Nestle the chicken breasts or thighs into the liquid, ensuring they are mostly submerged. (Frozen chicken is fine; add 30 minutes to cooking time.)
  4. Cook low and slow (6-8 hours on low, or 3-4 hours on high): Cover and cook without lifting the lid.
  5. Shred the chicken (5 minutes): When the timer goes off, use two forks to shred the chicken right in the slow cooker. Stir the shredded chicken back into the soup.
  6. Blend the white beans (5 minutes): Scoop out about 1 cup of hot broth and add it to a blender with the drained white beans. Blend until completely smooth (about 30 seconds). Pour the mixture back into the slow cooker and stir well. (Alternatively, use an immersion blender in a separate bowl.)
  7. Make the lime crema (3 minutes): In a small bowl, whisk together the sour cream or Greek yogurt, juice of 1 lime, and a pinch of salt. Taste and add more lime if desired. If too thick, add 1 teaspoon of water.
  8. Taste and adjust (2 minutes): Season with salt and pepper as needed. For more heat, stir in hot sauce or cayenne. If too thick, add a splash of broth; if too thin, cook uncovered for 15 minutes.
