A quick and easy no bake snack combining creamy peanut butter, dark chocolate, oats, and protein powder for a delicious and energizing treat.

  • 1 cup creamy natural peanut butter (unsweetened)
  • 1 cup vanilla protein powder (whey or plant-based)
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons ground flaxseed
  • 1 ½ cups old-fashioned rolled oats
  • ½ cup dark chocolate chips (at least 70% cocoa)
  • Pinch of sea salt (about 1/8 teaspoon)
  • 12 tablespoons unsweetened almond milk (optional)

Instructions

  1. In a mixing bowl, combine 1 cup peanut butter and 1 cup protein powder. Stir vigorously for 2-3 minutes until smooth and creamy. Add 1 tablespoon almond milk if mixture is too stiff.
  2. Mix in 2 tablespoons honey or maple syrup and 2 tablespoons ground flaxseed.
  3. Gently fold in 1 ½ cups rolled oats and ½ cup dark chocolate chips. Add another tablespoon almond milk if mixture is too dry.
  4. Add a pinch of sea salt and stir to balance flavors.
  5. Roll the mixture into 1-inch balls using your hands, dampening them slightly with water if sticky. You should get about 15-18 balls.
  6. Place the balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.

Notes

Use natural peanut butter with no added sugar or oils for best texture and flavor. Thoroughly combine peanut butter and protein powder first to avoid dry pockets. Adjust sweetener and oats to fix texture issues. Chill for at least 30 minutes to firm up. Store in airtight container in fridge up to 1 week or freeze up to 2 months.
