A quick and creamy mug mac and cheese made entirely in the microwave, perfect for dorm rooms or late-night cravings. This foolproof recipe uses real cheese and a secret cornstarch trick for silky texture without any pots or strainers.

  • ¼ cup shredded sharp cheddar cheese (preferably Cabot or Tillamook; pre-shredded works but fresh grated melts smoother)
  • 2 tablespoons whole milk (or 2%; any milk works, but whole milk gives the creamiest result)
  • 1 tablespoon unsalted butter (salted butter is fine, just skip any extra salt)
  • ¼ teaspoon cornstarch (secret to a silky sauce—don’t skip it)
  • Pinch of salt (about ⅛ teaspoon, or to taste)
  • Pinch of black pepper (freshly ground if you have it)
  • Optional: ¼ teaspoon garlic powder or paprika (for a flavor boost)

Instructions

  1. Add pasta and water to the mug. Place ½ cup of elbow macaroni into your mug. Pour in enough water to cover the pasta by about 1 inch—roughly ½ cup of water. Don’t fill it to the top, or it will bubble over in the microwave.
  2. Microwave for 2 minutes on high. This is the first cook. The pasta will start to soften but won’t be done. Stir it with your fork to prevent sticking.
  3. Microwave for another 1 to 2 minutes. Check after 1 minute. The pasta should be tender but still slightly firm in the center—al dente. If it’s still crunchy, add 30 seconds. Every microwave is different; mine takes exactly 2 minutes and 45 seconds total.
  4. Carefully drain the water. Use a fork to hold the pasta back while you tilt the mug over the sink. Or use a small strainer if you have one. Be careful—the mug will be hot. Let it drain completely.
  5. Add butter and milk. While the pasta is still hot, add 1 tablespoon of butter and 2 tablespoons of milk. Stir until the butter melts completely. The heat from the pasta will help everything come together.
  6. Sprinkle in cornstarch, salt, and pepper. Add ¼ teaspoon cornstarch, a pinch of salt, and a pinch of pepper. Stir well. The cornstarch prevents the cheese from turning grainy—this is the trick that makes it silky.
  7. Add the shredded cheese. Sprinkle ¼ cup of shredded cheddar over the top. Stir vigorously until the cheese is fully melted and the sauce is smooth. If it looks too thick, add a splash more milk.
  8. Microwave for 20 to 30 seconds. This final blast melts everything together. Watch it closely—don’t let it boil over. Stir once more, and you’re done.
  9. Let it sit for 1 minute. I know you want to eat it immediately, but letting it rest thickens the sauce and prevents burns. Trust me on this.

Notes

Don’t overcook the pasta in the first round; it will continue to cook slightly after draining. Use a deep mug to prevent bubbling over. Grate your own cheese if possible for smoother melting. Stir between every step to prevent hot spots. If the sauce looks separated, add a tiny splash of milk and stir vigorously.
