This easy fall harvest Chex mix with candy corn is the perfect sweet-and-salty snack for autumn gatherings. Crunchy cereal, salty pretzels, and buttery nuts are coated in a warm spiced mixture and baked with candy corn for caramelized clusters that are absolutely addictive.

  • 3 cups Rice Chex cereal
  • 2 cups pretzel twists
  • 1 cup roasted salted peanuts
  • 1 cup roasted pumpkin seeds (pepitas), optional
  • 1 cup candy corn
  • 1/2 cup unsalted butter, melted
  • 3 tablespoons brown sugar, packed
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 250°F (120°C). Line a large rimmed baking sheet with parchment paper or a silicone mat.
  2. In a large mixing bowl, combine Corn Chex, Rice Chex, pretzel twists, peanuts, and pumpkin seeds (if using). Toss gently to distribute.
  3. In a small microwave-safe bowl, melt the butter. Whisk in brown sugar, maple syrup, vanilla extract, pumpkin pie spice, cinnamon, and salt until smooth.
  4. Drizzle the butter mixture over the cereal mixture. Fold gently with a spatula or your hands until every piece is evenly coated.
  5. Spread the coated mix onto the prepared baking sheet in an even layer.
  6. Bake for 20 minutes, stirring halfway through (after 10 minutes).
  7. Remove the pan from the oven. Sprinkle candy corn evenly over the warm mix and gently stir to distribute. The residual heat will soften the candy corn.
  8. Let the mix cool completely on the baking sheet for at least 30 minutes.
  9. Once cool, break into bite-sized clusters.

Notes

Don’t skip the parchment paper for easy cleanup. Add candy corn right after baking while the mix is warm but not hot to achieve the perfect chewy texture. Let the mix cool completely before storing to maintain crunchiness. Store in an airtight container at room temperature for up to 2 weeks. For a spicy version, add 1/2 teaspoon cayenne pepper to the butter mixture. For a chocolate drizzle, melt 1/2 cup white or dark chocolate chips and drizzle over cooled mix.
