These turkey taco meatballs are a freezer-friendly, kid-approved, taco-spiced recipe that solves the ‘what’s for dinner?’ panic on busy nights. They’re budget-friendly, simple to make, and stay juicy even after reheating from frozen.

  • 1/2 cup (60 g) breadcrumbs (plain or Italian-style)
  • 1/4 cup (60 ml) milk (whole milk preferred)
  • 2 large eggs
  • 1 cup (120 g) shredded cheddar cheese (sharp cheddar preferred)
  • 3 tablespoons (45 ml) taco seasoning (store-bought or homemade)
  • 1/2 cup (80 g) finely diced onion (yellow or white)
  • 2 cloves minced garlic
  • 1 teaspoon (5 g) salt (adjust based on taco seasoning salt content)
  • 1/2 teaspoon (2 g) black pepper (freshly ground)
  • 1 tablespoon (15 ml) olive oil (for greasing baking sheet)
  • Optional: 1/4 cup (15 g) fresh cilantro, chopped

Instructions

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or foil. If you have a cooling rack, place it on the baking sheet and spray it lightly with oil.
  2. Make the panade: In a large mixing bowl, combine the breadcrumbs and milk. Let it sit for 5 minutes until the breadcrumbs absorb the liquid and form a paste.
  3. Add the remaining ingredients: To the panade, add the ground turkey, eggs, shredded cheddar, taco seasoning, diced onion, minced garlic, salt, and pepper. Use your hands to gently mix everything together just until combined (about 1 minute). Do not overmix.
  4. Shape the meatballs: Using a cookie scoop or tablespoon, portion out the mixture and roll into 1.5-inch (4 cm) balls. You should get about 28 to 30 meatballs. Place them on the prepared baking sheet, spacing them about 1 inch apart. If the mixture feels sticky, wet your hands slightly with water.
  5. Bake the meatballs: Place the baking sheet in the preheated oven and bake for 18 to 22 minutes. At the 15-minute mark, check them—they should be golden brown on the outside and reach an internal temperature of 165°F (74°C). If not, give them another 3 minutes.
  6. Cool completely: Remove the baking sheet from the oven and let the meatballs cool on the pan for 10 minutes. Then transfer them to a wire rack to cool completely—this is crucial if you’re freezing them.
  7. Freeze for later: Once the meatballs are completely cool, arrange them in a single layer on a parchment-lined baking sheet and freeze for 1 to 2 hours until solid. Then transfer them to freezer-safe bags or containers. Label with the date.

Notes

Don’t skip the panade—it keeps the lean turkey from drying out. Use a cookie scoop for even sizing. Test your taco seasoning for salt content and adjust added salt accordingly. Do not overmix the meatball mixture. Let meatballs cool completely before freezing to prevent sogginess. Reheat from frozen in a skillet with a little sauce or oil over medium-low heat for 8 to 10 minutes.
