Easy Garlic Butter Steak Bites with Parmesan Mashed Potatoes

Tender, crispy-edged steak bites coated in a rich garlic butter sauce, served over creamy Parmesan mashed potatoes. This quick and easy comfort food comes together in under 30 minutes and is perfect for busy weeknights or date night.

  • 1 ½ pounds sirloin steak or ribeye, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper, freshly ground
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh parsley, chopped
  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • ½ cup whole milk, warmed
  • 4 tablespoons unsalted butter, softened
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon salt
  • ¼ teaspoon garlic powder (optional)
  • 2 tablespoons sour cream

Instructions

  1. Start the potatoes first. Place the peeled and quartered Yukon Gold potatoes in a large pot and cover them with cold water by about 1 inch. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer. Cook for 12-15 minutes, until the potatoes are fork-tender. Drain them well in a colander.
  2. While the potatoes cook, prepare the steak bites. Pat the cubed sirloin steak dry with paper towels. Season the cubes generously with salt, black pepper, and smoked paprika. Toss to coat evenly. Let them sit at room temperature for about 10 minutes while you finish the potatoes.
  3. Make the mashed potatoes. Return the drained potatoes to the pot or transfer them to a large bowl. Add the softened butter and warm milk. Mash until smooth and creamy. Stir in the grated Parmesan, sour cream, garlic powder, and additional salt to taste. Cover to keep warm while you cook the steak.
  4. Sear the steak bites. Heat the olive oil in a large cast iron skillet over medium-high heat until it’s shimmering and just starting to smoke. Carefully add the steak cubes in a single layer—don’t crowd the pan. Work in batches if needed. Let them sear undisturbed for 2-3 minutes until a deep golden crust forms. Flip each piece and sear the other side for another 2 minutes for medium-rare. The internal temperature should reach 130-135°F.
  5. Make the garlic butter sauce. Reduce the heat to medium-low. Push the steak bites to one side of the pan and add 2 tablespoons of butter to the empty space. Once melted, add the minced garlic and red pepper flakes (if using). Stir constantly for about 30 seconds until the garlic is fragrant but not browned. Toss the steak bites in the garlic butter to coat them evenly. Add the remaining tablespoon of butter and let it melt into a glossy sauce.
  6. Finish and serve. Remove the pan from the heat immediately. Sprinkle the fresh parsley over the steak bites and give everything one last toss. Serve the steak bites hot over a generous scoop of Parmesan mashed potatoes. Spoon any remaining garlic butter from the pan over the top.

Notes

Pat the steak dry for a good sear. Don’t overcrowd the pan. Add garlic after searing to prevent burning. Use room temperature butter and warm milk for creamy mashed potatoes. Leftover steak bites keep 3-4 days in the fridge; mashed potatoes keep up to 5 days. Reheat steak in a skillet with a splash of broth. Mashed potatoes reheat well on the stovetop with a splash of milk.
