These homemade crustless peanut butter and jelly sandwiches are quick to make, perfect for freeze-ahead lunches, and customizable to your preferences. They capture nostalgic comfort with the convenience of ready-to-go meals.

Ingredients

Scale
  • 12 slices of white or whole wheat sandwich bread (soft, fresh loaf preferred)
  • ½ cup creamy or crunchy peanut butter
  • ½ cup grape, strawberry, raspberry, or favorite jelly or jam
  • Optional: honey or powdered sugar for sweetness in peanut butter

Instructions

  1. Prepare your workspace by laying out bread slices on a clean surface and trimming crusts if desired.
  2. Spread about 1 tablespoon of peanut butter evenly over one side of 6 bread slices, leaving a ¼ inch border.
  3. Spread about 1 tablespoon of jelly or jam on top of the peanut butter, avoiding overfilling.
  4. Place the remaining 6 bread slices on top, press gently, then use a 3-inch round cookie cutter or glass rim to cut and seal the sandwiches by pressing edges firmly.
  5. Place sealed sandwiches on a parchment-lined baking sheet in a single layer and freeze uncovered for 15 minutes.
  6. Transfer sandwiches to airtight freezer bags or containers, label with date, and freeze up to 1 month.

Notes

Use fresh, soft bread for best sealing. Avoid runny jelly to prevent leaks. Freeze sandwiches on trays first to prevent sticking. Thaw at room temperature or microwave for 15-20 seconds before eating. Substitute nut or seed butters and gluten-free bread as needed for allergies.
