  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 2 cups cooked jasmine or brown rice
  • 1 cup steamed broccoli florets
  • 1/2 cup shredded carrots
  • 2 stalks green onions, sliced
  • 1 teaspoon sesame seeds (optional)

Instructions

  1. In a medium bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil. Set aside.
  2. Slice the chicken breasts into 1-inch bite-sized pieces.
  3. Heat a non-stick skillet over medium-high heat. Add a drizzle of oil, then add the chicken pieces. Cook for 5-6 minutes, turning occasionally, until golden and nearly cooked through.
  4. Pour the prepared honey teriyaki sauce over the chicken in the pan. Stir to coat all pieces evenly and let simmer for 2-3 minutes.
  5. Mix cornstarch with water to create a slurry. Pour into the pan while stirring. The sauce will thicken quickly, coating the chicken with a glossy finish.
  6. Steam broccoli florets until just tender, about 3-4 minutes (or microwave frozen broccoli with a splash of water for 2-3 minutes).
  7. Divide cooked rice among meal prep containers or plates. Top with honey teriyaki chicken, steamed broccoli, shredded carrots, and sliced green onions.
  8. Sprinkle sesame seeds over the bowls for garnish.

Notes

If the sauce gets too thick, add a splash of water to loosen it. Slice chicken into uniform pieces for even cooking. Don’t overcrowd the pan to avoid steaming the chicken. Let meal prep bowls cool to room temperature before sealing to prevent soggy rice. Use tamari for gluten-free version and coconut sugar for lower glycemic index. Frozen vegetables can be used and steamed or microwaved before assembling.
