Easy Loaded Mashed Potato Casserole with Crispy Onions

This creamy, cheesy mashed potato casserole is topped with crispy fried onions for the ultimate comfort food side dish. Perfect for holidays, potlucks, or any gathering, it’s a crowd-pleaser that can be made ahead.

  • 5 pounds Yukon Gold potatoes, peeled and quartered
  • 1 cup sour cream, room temperature
  • 1/2 cup unsalted butter, melted
  • 1/2 cup whole milk, warmed
  • 1 teaspoon garlic powder
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper, freshly ground
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups crispy fried onions
  • 2 tablespoons melted butter
  • 2 tablespoons chopped fresh chives, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Place the peeled and quartered Yukon Gold potatoes in a large pot. Cover with cold water by about an inch. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer. Cook for 15 to 20 minutes, until fork-tender.
  3. Drain the potatoes thoroughly in a colander and let them steam dry for a minute or two.
  4. Return the drained potatoes to the pot or transfer to a large mixing bowl. Mash with a potato masher or ricer until smooth. Do not overmix.
  5. Add the sour cream, melted butter, warm milk, garlic powder, salt, and pepper. Stir gently until combined. Taste and adjust seasoning.
  6. Fold in 1 1/2 cups of the shredded cheddar cheese and all of the mozzarella cheese. Reserve the remaining 1/2 cup cheddar for the top. Stir until evenly distributed.
  7. Spoon the potato mixture into the greased baking dish and spread into an even layer.
  8. Sprinkle the remaining 1/2 cup cheddar cheese over the top. Scatter the crispy fried onions evenly over the cheese. Drizzle the melted butter over the onions.
  9. Bake for 25 to 30 minutes, until the edges are bubbly and the top is golden brown. If the onions brown too quickly, tent with foil for the last 10 minutes.
  10. Remove from the oven and let rest for 5 to 10 minutes before serving. Garnish with fresh chives.

Notes

To make ahead: Assemble the casserole without the topping, cover, and refrigerate for up to 24 hours. When ready to bake, add cheese and onions, then bake for 35-40 minutes. For freezing: Assemble completely (including topping), cover tightly, and freeze for up to 3 months. Thaw overnight in the refrigerator before baking. Add 10-15 minutes to baking time if starting cold.
