  • 2 cups crispy rice cereal
  • 1 cup pumpkin seeds (pepitas)
  • 1 cup pretzel sticks, broken into pieces
  • 1/3 cup pure maple syrup
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt, plus more for sprinkling
  • 1/2 cup dried cranberries (optional)
  • 1/4 cup mini chocolate chips (optional)
  • 1/2 cup unsweetened coconut flakes (optional)

Instructions

  1. Preheat oven to 300°F (150°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, combine mixed nuts, crispy rice cereal, pumpkin seeds, and broken pretzel pieces. Toss to distribute evenly.
  3. In a small saucepan over low heat, melt the butter. Remove from heat and whisk in maple syrup, cinnamon, nutmeg, ginger, vanilla extract, and sea salt until smooth.
  4. Pour the warm maple mixture over the dry ingredients. Gently fold with a spatula until every piece is evenly coated.
  5. Spread the coated mixture in an even layer on the prepared baking sheet. Avoid overcrowding; use two sheets if needed.
  6. Bake for 20 minutes, stirring halfway through (at the 10-minute mark). The mix should be golden brown and fragrant.
  7. Remove from oven and let cool completely on the baking sheet without stirring (about 30-40 minutes). The coating will crisp as it cools.
  8. Once cool, transfer to a large bowl. If using, fold in dried cranberries, mini chocolate chips, or coconut flakes.
  9. Gently break apart any large clusters with your hands.

Notes

Toast nuts first for extra crunch. Watch the oven closely as maple syrup can burn quickly. Cool completely before storing to maintain crunch. Store in an airtight container at room temperature for up to 2 weeks, or freeze for up to 3 months.
