  • 1/2 cup (100g) packed brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt

  • 1/2 cup (113g) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (120ml) buttermilk
  • 2 medium apples, peeled and diced (Granny Smith, Honeycrisp, or Fuji)
  • 1 cup (120g) powdered sugar, sifted
  • 3 tablespoons pure maple syrup
  • 1–2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Alternatively, grease and flour the pan.
  2. Peel and dice the apples into small cubes (about 1/2 inch). Toss with 1 tablespoon of flour to prevent sinking.
  3. In a large bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon.
  4. In a separate medium bowl, whisk together the melted butter, eggs, vanilla extract, and buttermilk until smooth and creamy.
  5. Pour the wet ingredients into the dry ingredients and stir with a rubber spatula until just combined. Do not overmix; a few lumps are fine.
  6. Fold in the diced apples gently until evenly distributed. The batter will be thick.
  7. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  8. Bake for 50-60 minutes, until the top is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs. If browning too quickly, tent with foil at the 40-minute mark.
  9. Cool the bread in the pan on a wire rack for 15 minutes. Then lift it out using the parchment overhang and cool completely on the rack.
  10. While the bread cools, make the glaze: In a small bowl, whisk together the sifted powdered sugar, maple syrup, vanilla extract, and 1 tablespoon of milk until smooth. Add more milk if too thick, or more powdered sugar if too thin.
  11. Once the bread is completely cool, pour the glaze over the top, spreading evenly and letting it drip down the sides. Let set for 10 minutes before slicing.
  12. Slice with a serrated knife and serve.

Use real maple syrup for the best flavor. Room temperature ingredients are important for a smooth batter. Do not overmix to avoid a dense bread.
