This easy maple pumpkin dump cake with pecans is a quick and delicious fall dessert that requires only 15 minutes of prep. With a soft, pudding-like pumpkin filling and a crispy maple-pecan topping, it’s the perfect treat for Thanksgiving, potlucks, or any autumn gathering.

Ingredients

Scale
  • 1 can (15 oz) pumpkin puree (not pumpkin pie filling)
  • 1 can (12 oz) evaporated milk
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pumpkin pie spice (or 1 tsp cinnamon, 1/2 tsp ginger, 1/4 tsp nutmeg, 1/4 tsp cloves)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 box (15.25 oz) yellow cake mix (without pudding in the mix)
  • 1 cup chopped pecans
  • 1/2 cup unsalted butter, melted
  • 1/4 cup maple syrup (real maple syrup)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or nonstick spray.
  2. In a large mixing bowl, whisk together the pumpkin puree, evaporated milk, sugar, eggs, pumpkin pie spice, vanilla extract, and salt until smooth and creamy, about 30 seconds.
  3. Pour the pumpkin filling into the prepared dish and spread it evenly. Tap the dish gently on the counter to release air bubbles.
  4. Sprinkle the dry cake mix evenly over the filling, covering every bit of the pumpkin mixture.
  5. Sprinkle the chopped pecans evenly over the cake mix layer.
  6. Drizzle the maple syrup in a zigzag pattern over the pecans and cake mix.
  7. Drizzle the melted butter evenly over the entire surface. Use a spoon to spread it into any dry areas if needed.
  8. Bake for 40-45 minutes, until the top is deep golden brown and the filling is bubbly around the edges. Let cool on a wire rack for at least 15 minutes before serving.

Notes

Place the baking dish on a rimmed baking sheet to catch any bubbling over. For best results, use real maple syrup, not pancake syrup. The toothpick test doesn’t work for dump cakes; look for visual cues: bubbly edges, deep golden top, and set filling. Let cool at least 15 minutes before cutting to allow the filling to set.
